Dahi Bhindi recipe is one of my favorite ways of making and eating Bhindi or Okra. Why? you don’t have to worry about the bhindi being sticky. And the aromatic spices that make this curd based curry special, of course. Sanjeev Kapoor’s Dahi Bhindi recipe uses a bit of besan. But it is used in so may other veggies! I tend to use it only when the curry needs to be thickened. This Masala Bhindi recipe can be done without besan and bhindi’s sticky, gooey material is enough to make this Bhindi Curry thick.

Equipment for Dahi Bhindi Recipe

You don’t need any special equipment to make this recipe. A few automation tools do help in reducing the amount of time and work you need to put in. A good food processor can help you reduce the time needed to chop the bhindi and onions to a fraction.

  • Wok or Kadhai
  • Food Processor, to finely chop the onions

Dahi Bhindi Recipe Ingredients

This Masala Bhindi banks on yogurt, but the whole spices are the main ingredients here as they bring you all the warm and aromatic taste to the curry.

  • 2 Cups Chopped Bhindi
  • 1 Cup finely Chopped Onion
  • 1/2 Cup Sour Dahi our Curd or Yogurt, whisked smooth
  • 8 Whole Pepper corns
  • 4 Cloves
  • 1 inch Cinnamon stick
  • 1 Black Cardomom pod
  • 2 Tbsp Oil
  • 1/2 tsp Garam Masala
  • 1/2 tsp Corriander Powder
  • 1 tsp Red Chili Powder
  • 1/2 tsp Turmeric
  • 1 tsp Salt
  • 1/2 tsp Sugar

How to Make Dahi Bhindi Recipe

Dahi Bhindi recipe is easy to make and takes very little preparation. Here’s what you need to do to make delicious Dahai Wali Bhindi.

  1. Heat the Oil in a Wok and add the whole spices or Khada Masala to the oil
  2. Let the spices sputter on a low heat until you can smell the aroma of the spices
  3. Add the onions and saute them until they are cooked. Add spoonfuls of water as need to avoid getting the onions burnt.
  4. Add the Turmeric, chili powder, and salt to the onions and mix well
  5. Now, add the Dahi and cook it until the water separates and you can see a bit of oil on the edges
  6. Add the Bhindi, mix well and cover the wok. Let it cook on a medium heat for 10 min
  7. Add the Garam Masala powder and coriander powder and let it cook for few more minutes

And it is done. Your Dahi Bhindi recipe is ready to be served with warm chapatis and your favorite pickle.
