We got a brief glimpse of chef Eraldo’s hospitality as he showcased some of the new dishes on the new menu that diners can enjoy 5th May 2016 onward. The chef stuck to his promise and stress on fresh produce.

The Watermelon-Mango salad with fresh Feta cheese was lightly dressed and brought out the natural taste of the fruit. The very slightly salty Feta only accentuated the sweetness of the fruit and proved to be a great accompaniment with the fresh bread. The oven-fresh, soft and delicate bread was served with a tangy fresh tomato basil dip.

Chef Eraldo promises his patrons traditional Italian food with freshest of ingredients. He believes in the philosophy that a good chef’s food should talk and justify itself. Chef  Eraldo has planned a huge range of vegetarian options and all the vegetarians can hope for some new taste profiles as they explore the Italian cuisine. The Penne Norma chef Eraldo prepared at Prego was a flavorful combination of aubergine or eggplant in a simple tomato basil sauce. But like most other pastas, the tomato did not hog the attention. The eggplant flavor with garlic and olive oil was the star of the dish. What I also liked was that the sauce was just thin enough to coat the Penne and not the loose consistency that you will find in some restaurants.

For seafood lovers, the simple Salmon pasta is a must try. The sauce here was a bit thin and the Rotini slightly overcooked but the taste of Atlantic Salmon was unmistakable.

If you like to stick to chicken, Pollo Geneva or poached and pan grilled chicken fillet with a pine nut and basil pesto should be good choice. The dish is served with a small salad and potato wedges and should fulfill your veggie requirement too.

If you are still looking for something off the usual menus, there’s more. The Burrata cheese with tomatoes is something that you won’t find on the regular menus in Pune. The combination of mozzarella and cream with a simple oil dressing is a must have. The stringy exterior holds the soft cream inside as it melts in your mouth. Burrata has to be eaten fresh or it loses the stringy-soft thing that it has going. But with Chef Eraldo you don’t have to worry about the quality of ingredients.
