It was one of those days. My fridge was filled with a little bit of this and a little bit of that and it was time to get a new load from the market. But once you are spoiled for tasty food, eating something regular doesn’t seem very enticing. So I tried to make the best of what was available and cook something to keep my taste buds interested.

Shahi Veggies Recipe Ingredients
1 large Onion
5-6 Garlic cloves
1 inch Ginger
1 tbsp Poppy seeds
1 tbsp Cashews
2 tbsp Ghee or oil
1/4 tsp Turmeric
1/4 tsp Chili Powder
1/4 tsp Garam Masala powder
1 tbsp Cream
Shahi Veggies
1-2 large Capsicum, large cubes
2 cups Cauliflower
1 Onion cut in slivers
1 Tomato large peices
1 Carrot
Shahi Veggies Recipe Method
1.Boil 2 cups of water
2. Add the cubed onion, cashews, poppy seeds, garlic, and ginger and heat for 5 min. Allow to cool.
2. Drain all the water and make a paste of the remaining ingredients. Keep the stock for later use.
3. Heat the ghee and fry the slivered onion. Remove the onion on a plate.
4. Add the masala paste to the ghee in the wok and saute for few minutes
5. Add turmeric, chili and Garam Masala powder and saute some more
6. Add the cubed carrot and capsicum and cook for a few minutes
7. Add the tomatoes and cook for a couple of minutes
8. Add 1/2 cup of stock and cream, cook for another couple of minutes
Note: Add stock by the ladle as needed to avoid charring the masala

Serve with a crisp roti fresh off the stove or a butter paratha.
And now it is time for our movie. Bollywood movies are mostly run of the mill, although the new ones do try to do something new. It is amazing that with a history as rich as India’s we see very few movies based on India’s History. So when Jodhaa Akbar came along it was a very refreshing change. A. R. Rehman’s music made the movie more interesting and the songs were enjoyable.
