Mexican Macaroni Recipe: Celebrating Cinco De Mayo

Cinco De Mayo or fifth of May is celebrated in Mexico and most part of the US every year to mark Mexico’s victory over invading French troops in the battle of Puebla. The celebrations in the Us date back to the time of the victory, when the miners working in California at the time of Gold rush erupted in spontaneous celebrations. The tradition has lasted since then and with increasing Mexican population, has become a mainstream event in the annual calendar.

The thing is, I was bored with the routine dinner and wanted some change. With hardly any ingredients at hand I thought of making some quick pasta. The corn was the only thing on hand, which is not usually a veggie of choice for a pasta. So here it a quick recipe to change the daily flavor profile – Pasta with a Mexican twist.

2 Cup uncooked Macaroni pasta

4-5 large, Plum Tomatoes

1 Red Bell Pepper

1 Corn, Shucked and blanched

3-4 Garlic Cloves

1 Tsp Chili Powder (Spice Mix)

1/2 cup Milk

1 Tbsp Sugar

1/2 tsp Dry Basil

1 Tbsp Olive Oil, more fro garnish

How to Make Mexican Macaroni Pasta

1. Roast the Red Bell Pepper on the stove flame

2. Blend the tomatoes and  chopped bell pepper

3. Cook the pasta as per the packet instructions, shouldn’t me more than ten minutes

4. Heat the olive oil and tomatoes and bell pepper paste to the pot

5. Add a pinch of salt and cook them until they are completely cooked and almost liquid

6. Add the Basil, and chili powder and simmer for a few minutes

7. Add the milk and corn kernels and heat for another few minutes

8. Add and toss the macaroni in the sauce

Serve with garlic bread and garnish with olive oil, with a side of an entertaining movie.

Multiple plots and storyline makes this mindless action movie much more interesting than what it appears to be. Machete is a Mexican federal on a mission to rescue a kidnapped girl. However, he is betrayed by his captain and loses his wife in a backlash at the hands of a Mexican drug lord.
