A sandwich is a savior. There was a time when I literally had sandwiches with cold cuts for three meals a day. And to reassure myself that I was on a healthy diet, added a can of V8 juice every now and then. Well, it tasted almost like Bloody Mary mix!
So, I can eat a good sandwich any time of the day and is the quickest meal that you can assemble when short on time. Today, I had a little more time on hands and the chicken in the fridge was begging to be used.

Grilled Chicken Sandwich Ingredients
1 Boneless Chicken Breast
1/2 Corn Meal
1/2 Bread Crumbs
1 Tbsp Pepper
1 Tsp salt
1 tsp Dry Oregano
1Tbsp Oil
Toasted bread slices
Iceberg Lettuce
Tomatoes
Pickles
Cheese Slices
Grilled Chicken Sandwich Method
1. Marinate the chicken in Salt and Pepper for at least an hour
2. Mix the Corn Meal and Bread crumbs on a plate
3. Add the dry Oregano and salt to the mixture
4. Coat the chicken with the corn meal and bread crumbs mixture
5. Grill the chicken in a pan, 5-10 min on each side at medium heat
6. Create a bed of lettuce on a slice of bread and place the grilled chicken

7. Place the cheese slice and top with tomato slices, pickles, and lettuce to assemble the sandwich
