Summer has thankfully passed here. Monsoons is perhaps the only time when it gets really cold and wet in the Sahyadri mountain ranges in Western Maharashtra. When everything is green and a bit bleak. Chicken Soup is just the thing you need to boost your immunity and get ready for the common cold we know is coming. So I am going to share a simple and flavorful recipe of chicken soup with you.

Not sure if this is the chicken soup for the soul, but it sure is one for your tummy. There is something very comforting about sipping on hot chicken soup. I love the soothing, peppery chicken stock as it warms you from the inside. It has been raining for the last two days. A welcome relief from the near-drought situation the state had been facing. And to celebrate this, I have been working on planning a soup binge on the blog. Can’t say for sure how many I can come up with, but the plan is nearly in place.

Chicken Soup Recipe Ingredients

500 gms or half pound Chicken

4 Cups water

1 Tbsp Pepper

1 Tbsp Salt

1 tsp Sugar

1/2 Cup Celery, chopped

1 Cup Carrots, cubed

1 Cup Onions, cubed

1 tsp Thyme

How to Make Chicken Soup

1. Clean and then boil the chicken in the water with salt and pepper until it is well cooked

2. Drain and store the broth in a pot and keep the chicken aside to cool down

3. Debone the chicken, discard the bones and add the chicken to the broth

4. Add the other ingredients and let it simmer covered for 30 minutes, or until carrots are cooked

5. Serve hot

Chicken Soup has long been regarded as comfort food that you offer someone suffering from some illness.  Although touted as a cure for common cold and flue, there is no evidence that it can help in either. But the lore continues. Chicken Soup was also mentioned in John Steinbeck’s 1952 book East of Eden in context of something you would give to help a person recuperate.
