Winter is the best time here int he Southern parts of India where temperatures rarely ever dip. This year has been good so far. With El Nino out of the way, we have had a good monsoon and a good winter. You know that means that the markets are flush with loads of fresh veggies. And a Tomato soup recipe always tastes that much better when made with fresh tomatoes.
With another wave of snowfall in the North and a terrible avalanche, the temperatures in the plains too have gone down a notch and it is time to enjoy a cup of soup. But this opportunity is so fleeting that you need to grab and enjoy your soup when you can. Tomato prices have dropped to single digits and when you have mountains of juicy tomatoes everywhere, you have to try cooking with fresh ingredients. The homemade pasta sauce with a fresh batch of tomatoes and basil is a routine feature.
Some Tomato soup recipe use garlic, but I prefer to keep plain. Sanjeev Kapoor’s tomato soup recipe also used celery. While I love celery, it can easily overpower the sweet taste of tomato. So yesterday, I made a quick version of tomato soup and it came out creamy and amazing, with almost no effort. And hence the reason for using a stock image here. I am getting lazier and clicking photos is getting increasingly boring.
