Buoyed by the Thai Masterclass at Ban Tao, Hyatt, Pune and my unflinching love for coconut based Thai curries, I decided to make the vegetable Red Thai Curry. And this delicious recipe is not only hot and spicy, but also healthy. Coconut Milk and Tofu are both rich in Iron and perfect if you are looking to keep anemia at bay and boost you Iron intake.
I had not been to Dorabjee’s for nearly a year. The recent update at the masterclass that they now have fresh Galangal and my depleting stock of herbs, spices, and sauces finally provided the nudge to make that trip to the store. What do you know. Not only they have all these new Thai cuisine essentials, but there is a complete new range of cheeses added to their store.

After a grueling shopping for all the different ingredients that were missing in my kitchen, I needed something really nice for dinner. With fresh Galangal and Bird’s eye chili, Thai Red Curry won over some other ingredients that could afford to chill in the fridge for a week or more.

Vegetable Red Thai Curry Ingrdients
1 Cup Coconut Cream
1 Cup Tofu cubes
1/2 Cup Mushrooms
1/2 Cup Baby Corn
1/2 Cup Carrots
1/2 cup French Beans
1/2 Cup Onions
1/2 Cup Eggplant
1 Cup Water
3-4 Long strands of Lemon Grass
For the Red Thai Curry Paste
1/2 inch Galangal
8-10 Brid’s Eye Chilis
1/2 Onion
8-10 Garlic Cloves
2-3 Bedgi Chili (For Color)
1 tsp Dry Coriander Powder
Kaffir Lime Leaves or Lemon Zest
Vegetable Red Thai Curry Method
1. Add the Paste ingredients to the grinder and make a paste.

2. Heat oil in a pot and the paste to the pot
3. Add the veggies and and saute for a minute

4. Add the water and Lemon Grass and bring the mixture to a boil
5. Simmer for a few minutes until you can smell the Lemon Grass
6. Add the Coconut cream and mix well
7. Lower the heat to the minimum a heat for a couple of minutes
8. Add Tofu and heat for a few more minutes
9. Take out the Lemon Grass leaves
10. Serve with hot rice. Select a sticky rice aromatic rice. Jasmine rice is the traditional rice of choice.

And if their Vegas trip was any indication, you are in for an hour of misfortunes and a string of bad choices. Unable to resist one last outing, Stu and the gang wake up in Bangkok with missing Teddy, a shaved Alan and with Teddy’s severed finger. With a few memorable sequences and typical hangover funny moments, it is a light comedy that you will enjoy with your food with minimum attention to the on-screen events.
