Saoji food has been around a long time in and around Nagpur. But recent years have elevated this simple recipe from the fringe and made it synonymous with Nagpur food. Once known for its Oranges, the city is as well known for Saoji food. And like most of the Varhadi recipes from the central part of India, this Saoji Mutton recipe is super hot and spicy.
But it may not be as spicy as the ‘Ravani Mutton’ (Ravan equals the demon king in Ramayana)which is legendary for its equal parts – one cup oil and one cup red chili powder – measure. Our Saoji Mutton recipe is not as hot, so feel free to add a tablespoon of red chili powder if want to have that burning sensation on your lips and get those blocked sinuses flowing.

Saoji Mutton Reipe Ingredients
- 250 gms fresh Mutton
- 1/2 tsp Pepper
- 1/4 tsp Shah Jeera (Caraway Seeds)
- 1/2 tsp Cloves
- 1 inch Cinnamon stick
- 1 Bay leaf
- 1 Black Cardomom
- 1 Tbsp Red Chili Powder
- 1 tsp Turmeric
- 2 Medium Onions
- 2 Tbsp Dry Coconut
- 1 Tbsp Coriander Powder
- 1 inch Ginger
- 4-6 Garlic Cloves
- 1/2 Cup Oil
- 2 Cups water
How to Make Saoji Mutton Recipe
- Clean the Mutton and make a paste of Ginger and Garlic
- Mix in a tsp of Turmeric, salt and the Ginger-Garlic paste and marinate the mutton for at least a couple of hours
- Cut the onions in half and roast them on the gas flame until they appear translucent and somewhat charred
- Dry roast the spices and the coconut slivers
- Add the dry spices, coconut, and the onions to the grinder to make a smooth paste
- Heat the oil, add the ground masala, and fry for a couple of minutes on medium heat
- Add turmeric and the red chili powder and fry for a minute more
- Add the marinated mutton and fry it with the thick masala for a few minutes on medium heat
- Add the water, cover the pot, and cook on medium heat for 15 minutes
