Rotisserie Chicken is one of my favorite ingredients to make quick and easy chicken recipes. While it is fun to use the leftover Rotisserie chicken in sandwiches and salads, I usually buy it from the grocery store to make one of these yummy leftover recipes. For Indian recipes like Butter Chicken or some quick chicken Alfredo, using Rotisserie  chicken for cooking brings down the cooking time to minutes. Rotisserie Chicken leftover recipes are the perfect option for making quick, weekday dinners or lunches.

If you ask me, leftover chicken always tastes better. With all the spices seeped in, the chicken becomes much tastier. Here are some recipes that you can make from leftover rotisserie chicken in less than 20 minutes and get your meal ready in a jiffy.

Chicken Enchilada Nachos

Mexican cuisine is one of my favorites. Well most are but, who can say no to loaded nachos! With this Enchilada Chicken nachos recipe by Ali and Gimme Some Oven, you can make a quick and hearty snack with your leftover rotisserie chicken. Spread some tortilla chips, top it with corn and peppers, load it up with chicken and enchilada sauce and you have a snack or a meal ready in less than twenty minutes.

Thai Chicken Flatbread Pizza

Can there be a better meal than a hot pizza topped with gooey cheese? One of the advantages of using rotisserie chicken is that it is mildly spiced and can blend into any cuisine. Mix in cooked Penne with Olive Oil, Red Pepper, Zucchini and de-boned chicken from the Rotisserie and it should give you a simple an easy meal in minutes. And if you can’t do without cheese, sprinkle it with some smoked Gouda to get that extra punch for your rotisserie chicken pasta recipe.

Chicken Lettuce Wraps

This is not a recipe for you on a diet. While it may sound like one, Lettuce wraps are delicious and filling, especially when you have chicken. What’s best about this dish is that you can toss in what you like. Make some McDonald’s style quick Asian salad with some purple cabbage, capsicum, orange slices and Asian salad dressing and wrap it all up in crunchy lettuce leaves.
