Pizza is something you can make quickly with any combination of veggies and cheese. With a homemade pizza sauce, you can tweak the pizza to your taste. And if there is absolutely no cheese at hand, try some without one too. When there is no cheese, my favorite recipe is a Ricotta based pizza. You can make ricotta in minutes and get a different than usual taste profile for your pizza.

Tomatoes on the other hand are always available. Although I have nothing against store bought pizza sauce, I will prefer a homemade pizza sauce any day. If you want to make authentic Italian pizza sauce, I suggest you get some canned Italian tomatoes, these a have unique sweet taste that local tomatoes may not have. If you do make the pizza sauce with fresh tomatoes, try to use ripe, juicy and all red tomatoes. try this quick and easy pizza sauce recipe and tell me how it worked out for you.
