Egg Biryani Recipe

I have been meaning to cook this one for a long time. My evening walk in search of Ramadan stalls in Camp, Pune didn’t bear any fruit last week. I had a vague recollection of stalls lining up and down the road to Baba Jaan Chowk. But it was not to be.

All I had at hand were a few eggs and so I decided to go with Egg Biryani. Biryani is mainly a slow cooked dish and making it with eggs doesn’t make much sense as there isn’t anything to cook. But I love Eggs and the way that aroma mixes with fragrant, spiced rice. So I decided to do it anyway.

Egg Biryani Ingredients

For the Masala Paste

2 onions

1 inch ginger

6-8 garlic cloves

Other Ingredients

3 Eggs, boiled

1 Cup uncooked Basmati rice

1 Tsp turmeric,

1 Tsp chili powder

5-6 Cloves

1 Black Cardomom pods

2-4 Green Cardomom pods

1 inch Cinnamon,

1 Bay leaf

1 Tsp Pepper corn,

1/2 Rampatri flower

How to Cook Egg Biryani

1. Soak the rice in water a keep it aside

2. Heat 2 cups water and add 3 eggs

3. Boil the Eggs for 5 minutes and keep the aside

4. Mix the soaked rice in 2 cups water, half inch Cinnamon, a couple of green cardomom pods, and cloves

5. Cook the rice until its just tender and remove from heat

6. In a deep pot, heat the oil and add the whole dry spices

7. Add the ground paste and the remaining dry spices and cook for a few minutes

8. Peel and cut the boiled eggs in half

9. Fry the eggs in the masala for a couple of minutes and add the half cooked rice

10. Close the pot and let it steam on a low flame for a few minutes to absorb the masala and egg aroma.

 

Now what’s a good meal without a good movie. When you think of Biryani you automatically think of Lucknow or Hyderabad. And I have just the right movie for you that cover both these beautiful cities of India.

Daawat-e-Ishq translated literally means feast of love. I luckily stumbled upon this movie a month or so earlier while surfing the channels on the TV. Had it not been that I would probably have never voluntarily watched this movie. But I am glad I did. In the tradition of con artists, this one is one of the best. Parineeti Chopra and Aditya Roy Kapur both give good performances. The story moves at a fast pace and you never really feel like changing the channel. And that is a big thing in the world we live in.

Gulrez Qadir or Gullu is exasperated by constant marriage rejections because of denial to pay up the dowry for the marriage. This results in an elaborate plan to trap greedy grooms and their parents and extort money from them in return of the evidence. Gullu meets Amjad in Lucknow and falls in love. What ensues is something you must see.
