I love seafood, but I don’t eat it as much as I would like. Mostly because I am lazy and the fish is not available at every corner as chicken.
Anyway, I finally kicked myself into getting out at the right time and landed at our neighborhood fish shop. I like my fish to be fleshy and with minimum bones. So today, from the assortment of seafood, it had to be a slice of big Rohu.

Filet are also an option but the Basa fish fillet which is easily available, is tasteless. so it had to be fresh, local fish.

I am also bored of the same old ginger, garlic, onion masala and wanted to make something different. Coconut milk was the obvious choice. The problem is, mix coconut milk with coriander and you get a very traditional konkani fish curry. Mix it with basil and you shift into the Thai territory. So you get the problem – nothing new to eat.

I also didn’t want any strong spices. So here it is, Coconut milk poached fish with parsley. Parsley was something I had in abundance. It is aromatic enough at the same time mellow to not overshadow the fish.

Coconut Milk Poached Fish Ingredients

250 gms Rohu fish Slices
200 gms coconut milk
2 Tbsp parsley
1 Tbsp lemon juice
1 tsp Garlic
1 tsp sugar
1 tsp pepper
salt to taste

Coconut Milk Poached Fish Method

1. Heat the coconut milk on a low flame for a couple of minutes

2. Add the garlic, lemon, and parsley and the fish slices

3. Add the sugar salt and pepper and cook the fish for ten minutes, turning once

4. Serve with a carb of your choice. I went with a dollop of mashed potatoes and some veggies.
