Sandwiches are the snack mainstay in Summer. And not long ago, sandwiches were lunch for most of the week along with a fruit. A chicken sandwich can give all the required nutrients and also keep your stomach full for a long time.

In Pune, Summer time was mostly spent on M.G Road just hanging around with friends. The hawkers lining the main road was a big attraction at that time. Sandwiches then became the most economical option to fill up and last through the evening.
This basic chicken sandwich is something most Puneites will identify with as having eaten at Marz-o-Rin. I think the preparation was also common across clubs and you could always find it on their menus.
So this is how you make a basic Chicken Sandwich that can be prepped on the weekend and can easily fix your lunch for at least a couple of days in the week.
Chicken Sandwich Recipe Ingredients
100 gms Boneless Chicken Breast
1 tsp Crushed Black Pepper
1/2 tsp Salt
1 tbsp Salted Butter
2 Cups Water
Chicken Sandwich Recipe Method
1. Bring the water to a boil in a pot
2. Add the chicken breast and cook for 10-15 minutes on medium heat
3. Drain the water, you can use it later as stock

4. Shred the Chicken with a couple of forks
5. Add the salt and Pepper
6. Heavily butter the bread and stack the shredded chicken and bread slices
7. Press lightly with your palm, cut diagonally and serve.
The best part is that you can refrigerate the chicken for a couple of days and then make a sandwich in minutes. Simple and delicious, you definitely can’t go wrong with this one.
