Tofu is a staple in my kitchen. There is no trip to the market that does not include at least a couple of packs of this Paneer alternative that I got used to a few years earlier. There is no looking back now.
Aaah, Calzone! It is finally raining in Pune. Monsoon seems to be stronger during its withdrawal. The dark clouds and cooler winds are a welcoming sight. This kind of afternoon weather calls for a steaming snack. Steaming Momos or Dumplings would have been nice. But I finally decided to try my hand at baking Calzone.

Making the bread dough has been a problem for some time now. I think I have nailed it now. My couple of attempts to bake a Pizza from scratch with Wheat flour have bombed. Not sure if it is the dough or the oven temperature. I will keep you posted how that goes.
So for eliminating one of the variables, I decided to go with all purpose flour (Maida) for this Calzone experiment.
Calzone Recipe Ingredients
For the Dough
2 Cups white flour
1 Tbsp Baker’s Yeast – If you are in Pune, you will find this in Dorabjee’s, around Tofu and cheeses.
1 Tsp Sugar
1 Tsp Salt
2 Tbsp Oil
1/2 Cup warm water
More water as needed
Preparing the Calzone Dough
- Sift the All Purpose Flour on a large plate
- Add the salt to the flour
- Warm the water to activate the yeast. It is warm enough if you feel it hot on dipping your finger in the water.
- Add the yeast and sugar and wait for a few minutes for the yeast to activate

- Mix the water and yeast mixture slowly to the flour to form a sticky dough.
- Knead the dough for ten minutes, adding oil as needed, to form an elastic dough
- Keep aside for at least an hour for the dough to rise.
Calzone Stuffing Ingredients
1 Packet Tofu
1/2 Cup chopped Onions
1/2 Cup chopped Green Pepper
1 Tsp Basil
1 Tbsp Light Olive Oil
Shredded Cheddar Cheese
Del Monte Pizza Sauce
Preparing the Calzone Stuffing
- Heat the oil in a Wok and add onions and peppers and saute for a minute
- Crush the Tofu with your hands and add to the Wok

- Add the Dry Basil and saute for a minute
Tofu Calzone Method
- Preheat the oven to 210 deg Cen.
- Gently fold the dough and make six portions of the dough
- Generously Flour a wooden platform and roll out the dough
- Apply the Pizza sauce or Pasta sauce to the rolled dough

- Add the Tofu mixture and top it with lots of cheese
- Fold the dough to close the edges from all sides.
- Flour the Baking tray with Semolina or corn meal

- Place the Calzone on the baking tray and give it a oil wash
- Bake the Calzones for 20 min or until light brown in color

Rains and hot snack make the warm couch in front of the TV that much more attractive.
Serve the Calzone with Only You
