Monsoons used to the time for corn in India. We do get corn all year now, but monsoon is still the season when the corn is fresh and the kernels are most meaty and cheap.
On a busy day, a corn subzi can be a simple stir fried corn and onion with some cream. But I was in the mood to make something more restaurant style for the weekend. With a fresh bunch of spinach and a corn that was on its way out, combining these two made most sense.

Moreover, Corn Spinach is everyone’s favorite and used to be a regular takeaway order at a neighborhood restaurant. Well, the restaurants here for some reason struggle to keep the same taste, which changes every time the head cook or chef leaves the establishment.
Bhuni Makai in Spinach gravy is simple to make and at the same time different from the regular meal.
Bhuni Makai Ingredients
1 Corn on the cob
1 Large Onion
5-6 Garlic cloves
1/2 inch Ginger
2 Green Chilis
1 Bunch of Spinach, or 4 cups spinach puree
1 Tbsp Coriander powder
2 Tbsp oil
1 tsp Garam Masala
Salt to taste
Bhuni Makai Method
1. Roast the corn on the stove
2. Let it cool and remove the corn kernels off the cob
3. Heat 2 cups water and add the chunks of Onion, garlic cloves, and ginger to the hot water
4. Cook the onions until translucent and then drain the water
5. Heat water in a large container and blanch the spinach leaves
6. Mix the onion and spinach and make a smooth paste
7. Heat oil in a wok and add the spinach paste
8. Heat for a few minutes and then add the corn kernels
9. Add coriander powder and Garam Masala and heat for a couple minutes
