Theme restaurants are a big challenge, right from creating the ambience to offering food that is different. Sabyasachi Gorai’s Mineority by Saby in Kalyani Nagar, Pune wins hands down on all counts. Mineority comes from Mines and Ore and as you would have guessed it, the restaurant is about mines. But what’s the theme here, really? Chef Saby grew up in mining towns and realized that the places had unique culture within the larger region. The food was rustic and simple and very local. It were these childhood memories that drove Chef Saby to look into other mining towns around the world and bring that food to the people.
Mineority by Saby is like a world in itself. From the moment you step on to the way up the stairs, you are engulfed by black walls and art that depicts different elements of a mine. Although we can never imagine what it would be like to go underground in cramped spaced surrounded by coal, the dim lights and fixtures give you the feel.
With great attention to detail, you get the rustic feel in everything from tables and silverware to walls and floors. The wide glass window here tells the story of Chef Saby’s childhood as he explored the mining towns. The interiors and the ambience alone make a visit to Mineority by Saby a must.
Mineority by Saby Experience
Eating experience at Mineority by Saby is a string of surprises. Whether it is the surroundings or the menu, there will be no dearth of new things to try. The drinks menu is full of new cocktails that you will want to experience. Try the floral Mahua . . . Mehul that gets its unique taste from muddled Mahua flowers, which is also used make country liquor in some places in Eastern India. This, of course, uses IMFL.
The exciting Drinks menu has many such original offerings like the LG Shakti Yoghurt, that mixes Cream and spices with Whisky and is inspired by country liquor local to Asansol, WB. The drink is served in the container that milkmen used to deliver milk door to door.
The restaurant has recently launched a new Tiffin concept that can give you a glimpse of the type of food you can enjoy at leisure for Dinner. The Lunch tiffin is a perfect option if you want to sample the food and want to get in and out in a hurry. So next time you want to celebrate a team member’s promotion, or have an end of project party, try this tiffin from the mining towns.
The tiffins come in two sizes. There is a smaller version (Miner’s TIffin) that comes with just one veg or non-veg dish with rice, and there is a full version (Big Digger’s Tiffin) that comes with two main dishes along with two parathas and rice, which is more than enough for a working lunch. Along with the basic components, the meal also includes a glass of buttermilk and unique dessert to complete whatever you are celebrating. The Dehati Cookie and Cream comes with ginger cookies and sweet cream to go with the cookies and fits right into the working lunch category.
But you don’t have to go for the Fixed menu option. And if you are in for a long and leisurely lunch or dinner, there is a lot more to explore on the menu. From the eastern Indian mining towns to African mines and beyond you have a wide range of dishes that you will not find on any of the restaurant menus.
And like the rest of the restaurant, the food too is not just about the taste. The Signature Black Chicken Chunks will make you think you are digging into coal, but the juicy chicken cooked to perfect texture will dissolve in your mouth with a subtle after taste of sesame. The dish served with flat bread can also be a meal in itself if you are in hurry.
The Kenyan Suya Kebabs bring the taste of peanut stews in a grilled format as this mutton chunks marinated in peanut sauce fly off the skewers.
Mineority by Saby doesn’t disappoint you with desserts either. Cream or Chocolate? Take your pick. The Tres Leches Cake brings layers of creams in different forms to lull you into another world as you spoon through the moist cake and whipped cream.
And those who vouch by Chocolate desserts have at least one reason to get to the end of the meal. The Miner’s Dark Devil Cake comes with layers of chocolate and cream that balances the bitterness of dark chocolate with sweetness for that last punch.
