Monsoon is the best season in Pune. I long for the cold weather when you can enjoy a bowl of soup or binge on fried snacks. This year there hasn’t been much rain and very few cold days.

So instead of frying my favorite quick snack, I decided to bake these little, spicy pockets.
Baked Spring Rolls Ingredients
1 packet of Chetran Herbal Tofu
1 Small Chopped Onion
2 Tbsp Sunflower Seeds
2 Tbsp Black Raising
1 Tsp Curry Powder
20 Spring Roll Pastry Sheets
How to Make Baked Spring Roll
1. Thaw the Frozen Spring Roll Pastry Sheets
2. Chop the Onion and keep aside
3. Crumble the Herbal Tofu in a bowl
4. Mix all the ingredients

5. Take a spoonful of Tofu mixture and make the rolls as per the instructions on the packet

6. Lay the rolls on the baking sheet and brush with oil
7. Pre-heat the oven at 200 Deg. centigrade
8. Place the baking tray in the center rack and bake for 15 min or until the rolls are slightly brown
Baked Spring Roll Serving Suggestion
Serve with a simple Soya sauce, garlic, vinegar mixture. Checkout the dipping sauce recipe here.
Weekends are for movie marathons. What’s better? A dark, rainy afternoon and a plate of hot munchies. The baked spring rolls are a perfect snack. Put em in the oven and hop on to the couch to start your movie marathon.
This Sunday, I chose to put on Kung Fu Panda. I remeber watching this movie first on a transatlantic flight on the small screen and wanted to see it again for a long time now. There have been two other sequels, but I still like the first one best.
