I remember my first brush with Indian style Chinese food some 15 years back and it got me hooked. From that day on it has become a regular feature at home, on a street-side stall, and at a star restaurant. I think Chinese cuisine is still one of the cuisines that I never get bored of.

My cooking has been influenced by many, and the process of getting the fried rice right was a gift from my cousin.
In this recipe, I experiment with the Chinese five spice mix I created earlier this week.
Chinese Five-Spice Mix
1/2 tsp Pepper
1/4 tsp Cinnamon
1/4 tsp Sichuan Pepper
1/4 tsp Fennel
1/4 tsp Nutmeg
Grind all these ingredients to create a spice mix. You can also choose to order the Urban Flavorz Chinese Five Spice, if you have time on your hands.
Chicken Fried Rice Ingredients
1/4 kg Chicken, boneless
4 cups cooked rice
1 Egg
1 Onion, diced
1 Carrot, diced
1 Capcicum or Green Bell Pepper, diced
1/2 cup Spring Onion
2 tbsp oil
1/2 tsp soya sauce
1/2 tsp white vinegar
Chicken Fried Rice Method
1. Poach the chicken and remove from heat, and shred once it cools down a bit
2. In a wok, heat the oil on a high flame
3. Add the diced carrot and saute for a minute
4. Add the onions, and capsicum and saute for a minute
5. Add the chicken and saute some more on a high flame
6. In a separate non-stick pan, break the egg to make a quick scramble
7. Add the egg, soya sauce, vinegar, and the spice powder to the wok
8. Add the cooked rice and stir
Tip: To get a smoky flavor, hold the oil coated metal spatula on the stove flame and stir the rice. Repeat this a few times to get the smoky flavor.
9. Top the rice with spring onion and let it rest
