Eggplant Chilli Recipe – Semi Homemade

Eggplant . . yuk! that was me many years ago. As a kid, eating Eggplant was out of question. As a thumb rule, I hated eating anything that didn’t have a bite. It wasn’t until one summer my cousin virtually pushed the Eggplant subzi down my throat that I began eating it regularly. Chinese cuisine was the extent of world cuisine available in my city at that time and I would have, perhaps eaten anything with Chilli in the name.

Chilli chicken with fried chicken is a favorite. But half of my family is vegetarian and quarter does not eat tofu, which can get boring after some time. I prefer to use Paneer in traditional dishes, and so Eggplant came about as the ‘meat’ of choice.

 

Eggplant Chilli Ingredients

1 Tbsp Conrflour
1 Tbsp Soy Sauce
1 Tsp Salt
1 Tsp crushed Black Pepper
Oil for frying
2 Tbsp chopped Garlic
1 Cup capsicum cut in slivers
1 Cup Onion cut in slivers
5 Green Chillis cut in slivers
2 Tbsp Oil
2 Cups water

Eggplant Chilli Method

Before we can use the off-the-shelf Chicken Chilli Miracle Masala, we need to prep our Eggplant.

1. Mix the Eggplant cubes, Cornflour, Black Pepper, Salt, and Soy Sauce and set aside.
2. Heat the oil for frying
3. Add a few cubes and fry the Eggplant on high heat and set aside

Chilli Eggplant

1. Heat the 2 Tbsp oil
2. On a high heat, fry the garlic until browned, and then add the green chilli
3. Fry the onions and capsicum for a couple of minutes
4. Mix the contents of the Ching’s Chicken Chilli Masala packet in the water
5. Add the water to the wok and then add the fried eggplant
6. Simmer for a few minutes
7. Serve Eggplant Chilli with rice
