I have been wanting to make this for a long time. I like chicken, but lamb and goat meat are an absolute favorite. The name Laal Maas has a raw appeal that makes it almost irresistible. Yet, this popular and simple dish is surprisingly not listed on most menus in India.

For some reason the Rajasthani cuisine is quite synonymous with a vegetarian thali. Thali restaurants abound in every city in India. Pune has recently seen a few Marathi/Maratha thali restaurants that serve both vegetarian and meat based dishes, I would love to see more non-punjabi North Indian food options, but until then, cooking them is the only way forward. So here it is, my version of Laal Maas.
Laal Maas Recipe Ingredients
For the Marinade
250 gms goat meat
1 cup Yoghurt/curd
6 Red Kashmiri Chili (or a mix of local and Kashmiri chili)
8 cloves of garlic
For the Curry
1/2 cup ghee or clarified butter
2-3 inch Bay leaf
1 Black Cardamom pod
2 Green Cardamom pods
6-7 cloves
1/2 flower of Rampatri
1.5 cups of Onions, finely chopped
1.5 cups of water
Laal Maas Recipe Method
1. Make a paste of red chili and garlic
2. Mix the Youghurt, chilly paste and salt with the goat meat and set aside for at least 2 hours

3. When done, heat the clarified butter and add the dry spices. Fry them on low heat until you can smell the aroma of the spices
4. Add the chopped onions and fry until translucent, 5-10 min
5. Add the goat meat along with the marinade and cook until the oil separates

6. Add the water and cook on a low heat for 30 min or until the meat cooks
