Spaghetti Carbonara Recipe: Spicy Sausage Pasta

This has to be the easiest and quickest spaghetti recipe I have tried till now. Pasta has become a staple for the last ten years in my kitchen. There is hardly ever a week that goes by without having some type of pasta preparation for meal or evening snack. Spaghetti Carbonara is surely now a part of this regular feature.

I used to have chicken fajitas or prawns tossed with pasta all the time. But somehow never tried mixing eggs or milk in those preparations. My food experiments have become bolder since then and I have tried many new things. Goan Sausages is one of those.

This, unfortunately, is that last of the recipes from my Goan Sausage recipes series. I guess you, and I will have to wait until my next trip to this beautiful state for the next recipe. I am in love with the spicy Goan Sausage. Although I vouch by this ingredient, as it is where the dish gets all its flavor, you can substitute the Goan Sausages with any other chorizo.

The eggs and cream mixture gives all the creaminess that you are used to in a cheesy pasta preparations. Spaghetti Carbonara has an interesting history. Although mostly anecdotal, one theory suggests that the name comes from the woodcutter of the Appenine mountains, who made charcoal for fuel. Another story states that the name Carbonara – Charcoal burner – comes from the belief that this hearty meal was prepared for coal miners.

Spaghetti Carbonara Recipe Ingredients

3 Servings Spaghetti
1 Cup Crumbled Goan Sausage or Corico
2 Egg Yolks and 2 whole Eggs
1/2 Cup Cream
3-4 Garlic Cloves
Salt to taste

Spaghetti Carbonara Recipe

1. In a wok, heat the olive oil and then add the crumbled sausage

2. Cook until all the fat is rendered and add the shredded garlic

3. In a Pasta pot, cook the spaghetti in salt water according to the instructions on the packet

4. Keep 1 cup of the hot water and drain the remaining

5. Prepare a mixture of egg yolks and cream and give it a quick whisk

6. Mix the hot spaghetti with the sausage on a  low heat

7. Once mixed, turn the heat off and add the egg mixture, and then toss the pasta

You must be thinking that the recipe has no herbs or spices. That’s true. Spaghetti Carbonara is supposed to be a quick and easy recipe, no fuss. Including a flavorful sausage like the Goan Sausage, gives all the spicy flavors you need in your Spaghetti. With a just a few ingredients you can turn the traditional Carbonara into a flavorful dish that literally explodes in your mouth.
