Green Beans and Coconut Subzi

Green beans are so versatile. They are an essential component in most ‘mixed veg’ Indian preparations and a must-have in Indo-Chinese rice and noodles recipes. But green beans taste best as a main course with a nicely roasted roti.

Green Beans and Coconut Subzi

So I had some fresh coconut which had to be used in couple of days. I must have eaten this particular dish a number of times, and it is my one of the most preferred ways of eating green beans. A simple recipe for the routine weekday lunch or dinner.

Green Beans Coconut Subzi Ingredients

4 Cups Green Beans chopped

1 tsp Urad Dal

1 tsp Chana Dal

1 Cup grated fresh coconut

1 Tbsp Oil

1/2 tsp Mustard Seeds

1/2 tsp Turmeric

2-3 Dry Red Chillies

Pinch of Asafoetida

Salt to Taste

6 Cups water

Green Beans Coconut Subzi Method

1) Heat the water and bring it to a boil

2) Add the chopped Green Beans and boil for a few minutes, until slightly tender and drain

3) In a separate wok, heat the oil

4) Add the mustard seeds and wait until they begin to split

5) Add the dry Red Chillies, Turmeric, Asafoetida, and then add the blanched, chopped Green Beans

6) Saute for a couple of minutes and then add the grated coconut

7) Cover the wok and cook for a few minutes

8) Serve with a garnish of fresh grated coconut

Gourmet or simple, I need to watch my movie. With the tadka of Urad and Chana dal, the recipe has a very southern flavor. What can better complement a southern style recipe more than Deepika Padukone in Chennai Express.

I didn’t have much expectation from the movie, but it turned out to be lot more entertaining than my expectations. So if you haven’t had the opportunity to watch this one yet, you will definitely like this train journey rom-com.

Rahul is a worker in his grandfather’s confectionery shop, on the way to immerse his grandfather’s ashes, Rahul crosses paths with Meena, who is running from her family to avoid marrying the boy of her father’s choice.

You will enjoy the many twists in the story and how Rahul tries to wiggle out of difficult situations that Meena relentlessly puts him in.
