They say necessity is the mother of all inventions, and so is hunger. This recipe kind of came out of that necessity – hunger. The grumbling in my stomach was fast approaching a thunder, and there was no definite pool of ingredients to stick to a dish from a specific cuisine.
I had cream that was getting stale and would end up in trash in another day or two, but no pasta. I had noodles, but not all the veggies to make Hakka Noodles. And the hunger was getting worse.

You know how it is. the more hungry you get, the more you dream of wonderful foods that you can eat at the time. And I was reminded of my favorite – chicken pot pie.
So I did the next best thing. I decided to make Veg Pot-Pie Noodles! The Veg creamy Noodles turned out to be just the right kind of comfy, gooey food I was hoping to eat.

Veg CreamyNoodles Ingredients
2 Packets Sam’s Noodles (I prefer these over Ching’s)
2 cloves of Garlic
2 inch Parmesan Cheese block or Kraft Parmesan
3/4 Cup Carrot Cubes
1/2 Cup Onion Cubes
1/2 Cup Cabbage, cubes
1/2 Cup Peas
3/4 Cup Cream
1 1/2 Cup Milk
1 Tbsp Oil
2 Tbsp Butter
2 Tbsp Refined Flour
1 Tbsp Fresh Coarse Ground Pepper
Dash of nutmeg
Salt to taste
1 cup poached/ grilled chicken chunks(optional)
Veg Creamy Noodles Method
Step 1: Cook the noodles
1 Boil water in a large Wok or Kadhai
2 Add 1 tsp Oil and 1 Tbsp Salt to the boiling water
3 Add the noodles and boil until cooked
4 Remove the noodles in a colander and wash with cold water
Step 2: Prepare the Sauce
1 In the hot water, add the chopped veggies, boil them for a few of minutes and drain completely
2 In a Wok, heat the oil and butter, and then add the refined flour
3 Saute the flour until slightly pink, and then add the grated garlic
4 Add the milk and whisk the flour until there are no lumps
5 Add the Cream and the blanched veggies

6 Grate in the Parmesan cheese, Salt, and Pepper and simmer for a few minutes. Grate in a dash of nutmeg.
7 Wash the cooked noodles in cold water again. This ensures that the noodles are separated and do not form a lump.
8 Add the noodles to the wok and toss so that the sauce coats the noodles well.
9 If you just want to add chicken to this, you can add in some chopped poached or grilled chicken. I did not have any on hand that day.
Serve in a deep noodle bowl.
