The taste of Thai Basil, Lemongrass, and Galangal is intoxicating. For me, it is almost impossible to resist digging into a Thai curry. So much so that I end up eating one Thai curry preparation at least once a fortnight.
Thai food, of course, is much more than just the three coconut based curries. The Thai Jungle Curry comes from the Northern parts of Thailand. Although the ingredients are quite similar, the most telling difference is the absence of Coconut milk. Coconuts are not that easily available in the hills and so the coconut milk doesn’t make an appearance in this curry.

Thai Jungle Curry Ingredients
1 Inch Galangal, ground
3-4 Basil Leaves
3-4 Lemongrass straws bound
3-4 Garlic cloves
2 Tbsp Tamarind paste
5 Thai Red Chilis (Bird’s Eye)
1 Tbsp oil
2 Cups water
2 Tbsp Corriander, chopped
1 Medium Onion cubed or Shallots
2-3 Small Aubergine/Brinjals
1 Small Green Bell Pepper
1 Yellow Bell Pepper
200 Gms Fish (3-4 pieces of your choice)
Shrimp Paste (Optional)
Salt to taste
Thai Jungle Curry Method
- Pound the Basil Leaves, Garlick Galangal, and Chillies into a paste
- Heat the oil, add the paste, and saute for a minute
- Add the cut veggies
- Saute for a min and then add 2 cups water
- Add the Lemongrass and bring to a boil
- Let it simmer for 5 more minutes
- Add the fish and simmer until cooked. Approximately 10 min.
- Take out the Lemongrass strands
- Serve with sticky rice
