I have been aiming to make grilled polenta cakes for a long time now. The homemade corn meal has been languishing in my pantry for more than a year, used more frequently to dust Pizza pan than for Makki ki roti.

Anyway, so this other day, we made some corn soup. It is easier to savor some hot soups with rains and dipping temperatures. The corn soup recipe, however, left me with a lot of chewy corn kernel leftovers after draining the puree. Instead of throwing away this dollop of fiber, I thought of using up that corn meal and make some polenta cakes for breakfast.
You can eat the cakes with some sauce or you can eat them as a side with some eggs. I used the polenta cakes more like a sandwich filling, but these should also taste great as a burger patty for vegetarian burgers.

Grilled Polenta Ingrdients
1 cup Corn puree
1 cup Corn Meal, more if needed
1/2 tsp Baking Powder
1/2 tsp Black Pepper
1 Tbsp Sugar
1 tbsp Oil
salt to Taste
2 Tbsp Oil for Grilling
How to Make Grilled Polenta cakes
1. Mix all the ingrdients to make a loose dough, and let it stand for 30minutes
2. Heat water in a steamer
3. Coat the steamer tray with oil and make small cakes from the polenta dough
4. Line them in the colander and steam them for 10-15 min
5. Remove the cakes and let them cool
6. Heat the stove top grill or griddle and place the cakes ont he griddle
7. Grill from both sides on medium heat for 3 min each
Serve with sweet chili-garlic sauce.

Weekend breakfast are more elaborate. There is no rush to head out. You can sit back and nibble at your food leisurely, read the most insignificant part of the newspaper and turn on the TV early in the morning!
You know what goes best with a weekend breakfast, an hour of your favorite cartoons that will make you laugh and set off the day on a happy note.
